Avocados

Allow green, unripe avocados to ripen on the counter away from other fruits, then transfer to the refrigerator. Once cut, keep the pit in and rub with lemon or oil to reduce browning.

Keep avocados on the counter, away from other fruits such as apples and bananas as these and many others give off ethylene gas. This naturally occuring gas causes other fruits and vegetables to ripen faster. On the other hand, you can speed up ripening by placing avocados in a paper bag with an apple. Just make sure to check on them regularly to avoid over-ripening.

When the neck gives a bit, your avocado is ripe. Once ripe, store avocados in the refrigerator to slow further ripening.

To reduce browning and hardening once cut, keep the pit in and rub with oil or lemon. Store the open avocado in a sealed container in the refrigerator.

Compost-friendly tip: Be sure to remove the plastic sticker on the avocado and put it in the garbage to keep your compost clean.
