Turn very ripe avocados into creamy, slightly sweet popsicles – just 4 ingredients and 5 minutes of prep for a delicious, nutrient-rich treat!

Avocados are magical -- these yellow-green beauties are rich in unsaturated fat and potassium that promote heart health and dietary fiber to support heart and digestive health while regulating blood sugar and keeping us feeling fuller longer! Half of a medium-sized avocado contains 4-5 grams of dietary fiber that contributes to the Recommended Daily Allowance (RDA) of 25 to 30 grams. Many adults in the US only meet about half of this. Avocados also offer a range of vitamins, especially vitamin K and several B vitamins. All while adding a creamy, rich texture and flavor to a variety of dishes!

There are plenty of ways to use slightly overripe avocados – mashed as a sandwich topping, shaken with lime juice or vinegar and garlic for a salad dressing, in smoothies – or in these creamy, sweet avocado popsicles! Made with 4 ingredients and with 5 minutes to prepare, these are a simple, delicious, nutrient-packed treat. 

No popsicle molds? No problem! Simply use a muffin tin or a bread loaf tin lined with parchment paper. Use popsicle sticks or disposable/compostable flatware sitting around in the junk drawer. Enjoy!


Avocado Popsicles

INGREDIENTS

  • 2 ripe avocados, halved and deseeded
  • 2 limes, juiced
  • 1¼ c plain Greek yogurt (or regular yogurt)
  • 3 Tablespoons maple syrup or honey

INSTRUCTIONS

  1. In a blender or food processor, blend avocado until smooth.
  2. Add remaining ingredients and blend until smooth.
  3. Pour mixture into popsicle molds or into muffin tin cups or a loaf tin lined in parchment.
  4. Chill for at least 3 hours* before enjoying one as a snack or dessert.

*If using muffin tin or loaf pan, chill for an hour then add popsicle sticks and return to freezer for remaining 2 hours.


Food Waste/Maximize Your Food Tip:

You can store under ripe avocados on the countertop away from fruit that emit ethylene gas – such as apples and bananas -- until they are slightly soft when squeezed. You can then move them to the refrigerator to slow further ripening. If you (like me) sometimes forget about your avocados, you can still use them if they have very soft, somewhat browned flesh. If the flesh has any mold or has a chemical smell, you can send those straight to compost.
