I have been holding on to the many lemons given to me by my mother-in-law. I found a recipe from The Harvest Kitchen to make immune boosting lemon ice cubes that use the whole lemon. This is a great way to use up your lemons and get extra vitamin C while bringing your smoothies or glass of water to another level!
Directions:
- Wash 2-3 lemons well, remove any significant bruises and damage, then roughly chop into 1-2 inch chunks
- Put the chopped lemon (skin, seeds and all) in a high speed blender with a small amount of water
- Blend until the consistency is smooth, adding more water if needed
- Pour the lemon mixture into the ice cube trays
- Freeze until solid then transfer to a labelled freezer bag or container.
On cold days, add a cube of this lemon to a cup of boiling water with some honey for a warming and soothing vitamin-rich drink. And as the days get warmer, it is the ideal time to enjoy a frozen lemon ice cube in a glass of water on your patio.
